31 Days of Delicious Easy Recipes For Busy Wives: Baked Potato Bar (Day 2)

You and the fam arrive back home after a hectic day and everyone is starving.  You’ve got to feed them fast!  Be a hero by serving up a fun, baked potato bar that’s super simple to throw together.  We’re counting down 31 days of delicious easy recipes every day in August, so enjoy this ridiculously easy day #2 meal idea, my friend.

Day #1 of our 31 days of delicious easy recipes yesterday was all about protein-packed energy balls that couldn’t be easier.  Since yesterday’s recipe was a breakfast or snack idea, let’s talk about a fabulous dinner, shall we?!

Baked Potato Bar Ideas

Today’s dinner is a tough one, I’m not sure you can handle it.  (I joke!)  All you have to do is …..  1) Bake the potatoes, 2) add toppings, 3) eat the goodness.  Woot! Whether you do a little prep work early in the day to make things move faster when dinnertime comes, or you just throw this together at the last minute, this recipe idea is a keeper.  Not only is it simple and easy, but it can be as wholesome (or guilt-inducing) as you want it to be.

While up to six clean potatoes is placed into the microwave (the quick method I use) to cook for around five minutes each, you can start creating the “baked potato bar buffet” toppings.  By the time your topping bowls are arranged “buffet style,” the potatoes should be finished cooking.  Dinner is served!  Butter, cheeses, bacon, green onions, sour cream, any meats, and any vegetables of your choice work as great baked potato toppings.

The possibilities are endless.

Baked Potato Bar Hacks

  • Wash & partially cook potatoes earlier in the day
  • Have pre-cooked meats ready to go
  • Pre-chop veggies ahead of time
  • Let kiddos choose whatever toppings they want
  • Have Fun!
