31 Days of Delicious Easy Recipes For Busy Wives: Crockpot Chicken (Day 3)

Welcome to Day 3 (crockpot chicken!) of 31 Days of Delicious Easy Recipes  where I’m lightening your load in the kitchen! How ’bout a different recipe every day this month that helps you get food on the table during this super busy season?!

We all need fresh meal ideas in the kitchen now and then – especially when our weekdays are extremely busy.  These crockpot chicken ideas are so simple that it’s ridiculous not to add them to your monthly meal line-up at least once a month!

Crockpot Chicken Ideas

Here are some ideas of how to let your crockpot cook your chicken for you so that all you have to do is throw some “accessories” along with the cooked chicken to pull it off like a boss!  (Don’t worry, it’ll be our secret that you really didn’t work that hard).

  • Barbecue Chicken
  • Chicken salad sandwiches
  • Lemon Herb Chicken
  • Chicken Stir Fry
  • Pulled crockpot chicken
  • Chicken Quesadillas

Don’t you agree that when it’s time to get a chicken dish ready, having cooked chicken ready to go is 95 % of the battle?  So why not have a whole chicken, boneless chicken breasts, or chicken thighs slowly simmering in the crockpot while you go about your busy day?  I wrote a thorough post for you already about how to cook a whole chicken in the slow cooker and also get awesome chicken broth out of the deal.

How to Cook Whole Chicken

Cooking a whole bird is not the only way to do crockpot chicken.  Add boneless chicken breasts or thighs that you find on sale with your Kroger ad. Any type of chicken with a small amount of liquid at the bottom of the slow cooker (the chicken will generate it’s own juices also), with spices, cooked on low for several hours, almost can’t be messed up.

Add 1/2 cup to two cups of your favorite dressing or sauce as your “liquid” of choice to your crockpot chicken and cook on low for several hours. Remember these dressings that were on sale in the Kroger  weekly ad  recently?  These or various barbecue sauces are perfect to add to the slow cooker and forget about it until dinner time.  Barbecue sauce alone or mixed with honey are fabulous.

To make chicken salad, just add salt, pepper, 1 cup of mayo and a tablespoon of mustard to your cooked chicken, stir and add to toasted bread.  To make chicken quesadillas, simply add cooked chicken, veggies, and salsa (possibly from leftovers) to your tortillas and warm up.  Add pulled crockpot chicken to vegetables you have on hand that only take 10-20 minutes to prepare.
