I’m sharing the holy grail of pancakes over here… the best fluffy pancake recipe! To say that I’ve discovered the best pancakes recipe is a huge statement, I know. The fluffiest and best-tasting ones are no joking matter because I have a tough crowd to please over here. After using Bisquick Pancake Mix for years, I began experimenting in the kitchen to create a simple homemade pancake recipe that would make light and airy ones that stacked up. I couldn’t find a recipe online that I loved! A few would taste OK but lack the “fluff.” Others would be a little fluffy but taste terrible. This easy recipe is a lifesaver because it makes about 10-15 pancakes, depending on the size you make them, and they freeze and reheat very easily. Because they taste great even when reheated, it makes our mornings fast, happy, and a lot less stressful!

On school and work mornings, the family can now choose between a ready-made energy bite or a breakfast burrito. But on Saturdays, I love for my family to wake to hot flapjacks! My family is funny about our pancakes, and the Bisquick mix spoiled us! It was frustrating though all those years with Bisquick because #1 – making sure I have enough Bisquick on hand to handle the task, #2 – the expense of keeping the boxed baking mix on hand, and #3 – knowing that I could make a fluffy pancake recipe from scratch with whole food ingredients.

What is the secret to fluffy pancakes?

There are several variables that will add the most fluff. By not over mixing the batter, but stirring just until blended is the #1 secret. The 2nd secret is to let the batter sit for about five minutes before pouring into the pan.

By using the correct measurement of baking power and sugar, and by not over mixing, you’ll be on your way to a yummy breakfast.

How do you make the first pancake as good as the rest?

Many people end up with a first pancake that is not as light and fluffy as the rest of the batch. This is because the pan wasn’t lightly sprayed with excess removed or the skillet (medium heat) wasn’t hot enough before pouring the batter the first time. The way to test if a non-stick skillet is ready is by wetting your fingers on one hand at the kitchen faucet and then thump the water into the pan. If the pan sizzles, it’s ready. If nothing happens, give it a couple more minutes and test again. Keep the temperature on medium heat the entire time.

Perfect Fluffy Pancake Tips

The ingredients and instructions on a printable recipe card are below but here’s the basic idea ->

I suggest measuring all the ingredients out and putting them in a large mixing bowl one by one and then mixing once at the end to blend it all.  The reason for this is that if you mix after every ingredient, the pancake batter will be too tough.  We want fluffy!  After pancake mix is ready, set aside and let your pre-sprayed (with Pam) non-stick skillet pan warm on medium.  Flicking a few water drops from your fingers on the pan will let you know it’s ready if it sizzles.  If not, wait another minute to get to pouring.

Just add flour, baking powder, salt, sugar, milk, egg, melted butter, vanilla, and optional syrup to a large box and mix just til big lumps are gone.  Don’t overmix!  Butter your skillet, warm it on medium, and get the yummy goodness going.

Ingredients
  • 2 1/4 C All Purpose Flour
  • 4 teaspoons Baking powder
  • 1 1/4 teaspoon salt
  • 2 Tablespoons sugar
  • 1 3/4 milk
  • 1 egg
  • 3 Tablespoon melted butter
  • 1 teaspoon vanilla
  • optional: 1 teaspoon maple syrup
Instructions
  1. Add flour, baking powder, salt, sugar, milk, egg, melted butter, vanilla, and optional syrup to a large bowl and mix – just til big lumps are gone.
  2. Don’t overmix!
  3. Warm your skillet that has been sprayed with Pam on medium heat.
  4. Skillet is ready when water flicked onto it with fingers causes it to sizzle.
  5. Pour pancakes mix onto skillet in small blobs and turn when covered in bubbles. You can “peek” by lifting edge of pancake slightly to see if bottom is brown enough. Then flip.
  6. Enjoy!
