Homemade Meatballs – Incredible Low Carb Meal Ready In Minutes

Who doesn’t love homemade meatballs?! They can serve as a great protein snack, or the star in the best spaghetti sauce and pasta.  In the south, a favorite meal of many is to serve homemade meatballs over mashed potatoes.  You can always grab a bag of Kroger sales ad frozen meatballs, but I like this recipe for those days that you want to shop your pantry and stay home.  My scrumptious meatball recipe is also gluten free.  WooHoo!

Her amazing, low carb, homemade meatballs are easy, flavorful, and gluten free!

I apologize.  In the video, I mentioned garlic salt, but I meant to say garlic powder.  I realized my mistake after the filming was over. Both of the homemade meatballs recipes are low carb.  However, the oven-baked meatballs are more time intensive.  The recipe doesn’t call for bread crumbs like traditional recipes so they are also gluten free!

Let’s get on to that scrumptious but easy recipe, shall we?

Below you’ll find a printable recipe card for the baked meatballs recipe.  You’ll be surprised at how easy these are!

Easiest Homemade Meatballs Ready In 20 Minutes Flat
Ingredients
  • 1 1/2 pounds ground meat
  • 1 T Italian Seasoning
  • 3 T Liquid Aminos, Liquid Smoke, or Worchestershire
  • 1 Egg
  • 1 1/2 T Parsley
  • 1/4 C Parmesan Cheese
  • 1 1/2 T Salt
  • 1/2 T Pepper
  • 1 T Garlic Powder
Instructions
  1. Preheat oven to 425 degrees.
  2. Mix all spices in a bowl.
  3. Pour in Parmesan Cheese & one egg & stir til blended.
  4. Mix spice/cheese mixture into ground meat with your hands.
  5. Make small balls & line them on cookie sheet.
  6. Cook at 425 degrees for 15 minutes.
  7. No need to flip meatballs.
  8. Enjoy!

      Liquid Smoke is SO gooood! 😉 I had never heard of it until I had smokey tuna dip. Have you tried that recipe of mine? You could just put tuna in the top search bar and find it. So good!

    These meats seem easy to make, which is something I always look for in a recipe. But, I think you really had me sold with the Italian seasoning. A meatball has to pack a little flavor, right?
