Friends would compare how to make taco soup at parties and I wondered what all the fuss was about. They would get a twinkle in their eye as if they knew a big, juicy secret. I’m not much of a soup girl, even though I do cook a pretty mean spicy chili. Oh yeah, and a creamy potato soup where chunky red potatoes, cheese, and green onions are piled high. When a friend brought her taco soup concoction again to a Mom’s meeting, rich flavors had a party in my mouth. Before the night was over I was asking for her recipe.
I also figured out what the big secret is about how to make taco soup — it’s so stinkin’ easy! You can literally throw these ingredients into a slow cooker and come back to a mixture of flavors so heavenly, and a dish so hearty, that it seems unfair that you haven’t worked harder for it. Taco soup can easily be tweaked depending on what your family likes or what you have on hand.

- Ground Meat
- Taco Seasonings
- Tomatoes or Salsa
- Corn
- Beans
- Cheese
- Liquid like water, broth, or Salsa
Some people also add green chilies or jalapeno, red pepper flakes, ranch dressing mix, and onions to the mix. Besides cheese, some people add garnishes like green onion, olives, and sour cream. Tortilla chips or corn chips are used for dipping or creating “nachos.” Experiment and make your own variation that your family enjoys the best.
How to Make Taco Soup – Guru Style
I typically throw hamburger meat, homemade taco seasoning, salt and pepper, salsa, whole kernel corn, black beans, a tiny bit of jalapeno, and broth into a slow cooker on low and forget about it for hours. When complete, we top ours with a dollop of sour cream and a sprinkling of cheddar cheese that is all scooped up with tortilla chips. Mmmm – heaven.
You can cook on this on the stovetop if you are in a hurry but I suggest the slow cooker taco soup version for best results. The longer it marries together its flavors, the better. Let’s get to specifics:
- 1 1/2 pounds cooked ground meat
- 1 large jar of salsa or 2 large tomatoes
- 1 can or bag of unthawed whole kernel corn
- 1 can or 16 oz. of cooked black beans
- 1/2 ish cup of broth
- Homemade taco seasoning or packet
- salt and pepper to taste
- optional: 1/2 teaspoon of chopped jalapeno
- Toppings:
- cheese
- sour cream
- tortilla chips
- Turn crockpot on high and add all ingredients except toppings. Cook on high for 30 minutes before turning on low and letting cook for at least 3 hours. Adjust liquid to your liking.
You can make taco soup as healthy as you please. It’s already a wholesome, healthy meal but there is a clean eating taco soup version too. Now excuse me while I go fix another bowl of homemade taco soup for the evening and put the rest away for tomorrow’s leftovers. How about you?
