Quick Meatloaf Recipe (31 Days of Delicious Easy Recipes – Day 8)

I realized early on that Superman was a serious meat and potatoes fella and that he enjoys hearty dishes like an old-fashioned meatloaf recipe.  I never got to meet his amazing Mom but I’ve learned much about her homemaking legacy from the written recipes like meatloaf and shepherd’s pie that she left behind.  It makes me feel connected to her when I use them and I adore recreating dishes from his childhood that he enjoys.

Lately, I’ve been taking these tasty, old-fashioned dishes and making them quicker for myself and my busy, wifey friends.

Meatloaf Recipe
Today is Day #8 of our 31 days of Delicious Easy Recipes for Busy Wives and I hope it’s been helpful.  Let’s talk about how we make meatloaf around here that is moist, tasty, and quick, shall we?!

Quick & Tasty Meatloaf Recipe

In a large bowl, mix l lb of ground meat, 1 cup of old fashioned oats OR 1 cup of bread crumbs, 1 beaten egg, 1 cup tomatoes (or tomato sauce), 1 Tablespoon brown sugar, 1 Tablespoon salt, 1 Tablespoon pepper, 1 teaspoon onion powder, and 2 teaspoons Worcestershire.  Also, add in 1 Tablespoon of my secret ingredient…you ready?  Remember on day 4 when I mentioned Liquid Aminos or Coconut Aminos Sauce?  Yes, pour that in and mix it all in well.

Go ahead, get your hands dirty!

Even though it seems like a lot of steps – it isn’t because these are simple ingredients that you toss in a bowl and mix How easy is that?  

Now press this mixture into a greased loaf pan and place into a preheated 350-degree oven.  Set the timer to cook for 45 minutes.  While waiting for it to cook, mix 1 cup of ketchup, 1 tablespoon of brown sugar, and 1 teaspoon of water – stir well.  Carefully remove from oven after 45 minutes and pour ketchup mixture over the top.  Set oven to broil and place meatloaf recipe back in oven until the top browns slightly.  Don’t walk away! 

Remove meatloaf from oven when browned and allow to sit for at least 10 minutes (covered) before checking to see if meat is done and then serve.

Ingredients
  • 1 lb ground meat
  • 1 cup oats or bread crumbs

  • 1 T pepper
  • 1 t onion powder
  • 2 T Worcestershire

  • topping:
  • 1 cup <g class=”gr_ gr_14281 gr-alert gr_spell gr_run_anim ContextualSpelling ins-del multiReplace” id=”14281″ data-gr-id=”14281″>ketsup</g>
  • 1 T brown sugar
  • 1 t water
Instructions
  1.   6. Remove meatloaf from oven and allow to sit for at least 10 minutes (covered) before checking to see if meat is done and serve.

    Believe it or not I have never made meatloaf – it is not really an Irish thing ! But I love a recipe that says easy and I plan on adding this to my Menu Planning Monday dishes to try ! So thank you for sharing Shan
