31 Days of Delicious Easy Recipes For Busy Wives: Quick Red Beans And Rice (Day 6)

Our first, quick red beans and rice recipe was completely by accident.  We just ended up putting the meat, beans, and rice together, it was ready to eat in lightening speed, and the flavor was incredible.  When buttery, jalapeno cornbread is added you’ll think you’ve died and gone to heaven!  Let’s get on with day #6 of our 31 days of delicious easy recipes for busy wives, shall we?!

Quick Red Beans and Rice

 

This is another one of those recipes that uses ingredients that you probably have in your staple stash anyway.  We’ve mixed up the flavors of this recipe with different types of beans depending on what we had on hand.  You really can’t mess this quick red beans and rice up no matter which you use.

For the longest time we used ground sausage along with our beans and rice.  The spice that most sausages deliver add so much flavor to this dish.  Remember, I’m married to a deer slayer and have many hunter friends, therefore sausage is typically overflowing from the freezer.  Sausage wasn’t agreeing with our daughter so I switched to ground turkey.

The beauty of this recipe is that it’s so versatile, you can interchange the beans you have on hand, as well as the type of rice you want, and your favorite ground meat.  Awesome times three!

 

Quick Red Beans & Rice Recipe

In the following recipe, remember that you can interchange these as you wish but this is just what we do …..

Pour one cup of rice into two cups boiling water on the stovetop.  Add a dash of salt, stir lightly and turn down to low.  Cover with lid and set timer to remind you to turn off the rice in ten minutes.  During the ten minutes, cook ground meat til browned in a large pot and drain any excess grease.  Add 16 oz of precooked beans (or one can drained) to meat mixture.  Add 1/2 cup broth to bean/meat mixture and leave on low/medium.  When rice is complete, add it to bean/meat mixture and season with salt, pepper, and garlic powder.  Add additional broth if moisture is needed and leave on low.

It may sound too simple to be yummy, but I promise this quick red beans and rice dish is a favorite with my family – and that’s no small feat.  They are a tough crowd!  Enjoy the printable recipe card below to add to your easy meal arsenal.

  • 2 cups water
  • 1 cup rice
  • 16 oz beans
  • 1 lb ground meat
  • Up to l cup broth
  • 2 dashes of salt
  • 1 dash pepper
  • 1 dash garlic powder
