My crew gets tired of the same meals constantly, so I try to mix it up often. Healthy Meatloaf is a great choice whether you just need a new, clean eating meal or a yummy, comfort-style dinner for the 24 Day Trim Challenge.
Even after I figured out how to make meatloaf for my husband years ago {it was far from healthy}, I’ve never been a big fan of it.
Until now…..
I got the inspiration to make this yummy dinner idea from the recipe resources available for those who choose to join in the 24 Day Challenge {where you just learn how to consistently pour excellent nutrition into your body and watch it flourish}.
Healthy Meatloaf Recipe
Just like green and purple smoothies I talk about often, this recipe definitely tastes better than it looks. Trust me on this.
I didn’t veer too far from the original recipe but substituted some ingredients that I had on hand, and it turned out to be wonderful. Ready? Here we go:
- 1 – 1.5 Lean ground meat {I used venison}
- 2 eggs {I used just the yolks due to egg white allergy}
- 1/2 Cup Tomato sauce {sugar free}
- 1/4 Cup shredded carrots
- 1/2 Cup chopped onions
- 1/4 Cup orange, yellow, or red peppers
- 1/4 Cup chopped bell peppers
- 1/2 Cup Old Fashioned Oats {I used gluten free due to allergies}
- Garlic power and Pepper to taste
- Mix all ingredients except for tomato sauce. Lightly grease loaf pan or casserole dish, and place meat mixture in the pan and top with tomato sauce and more salt-free seasonings if you wish. Bake at 350 for 1 hour. Great leftovers!
