Easiest Chicken Quesadilla Recipe On The Table In 10 Minutes Tonight

All super-busy wives need those recipes in our back pocket that help us to get tasty dinners on the table FAST, don’t we? My chicken quesadilla recipe is my reoccurring go-to for a scrumptious, tasty meal in literally about ten minutes. Don’t believe me? There will be a printable recipe card just for you at the very end but here’s the basic idea: In order for this chicken quesadilla recipe to work quickly, you must have your favorite brand of tortillas, cooked or canned chicken, and one of the “base” choices. The key here is to add whatever you have on hand that’s ready to go.

The Base

You need some type of sauce to spread on the bottom of your tortillas so that your dinner isn’t dry. The fun (and stress-free) joy to this chicken quesadilla recipe is that you can mix it up each time you make it.

Most of the time, my “base” that is spread on the bottom of the tortilla is jarred salsa. We have also used sriracha ranch, sriracha mayonnaise, ranch dressing, etc. Depending on what toppings you are building your quesadilla with will determine what you want your base to be.

The Meat

You can certainly use whatever meat you want in your quesadillas like leftover steak strips or ground meat. Since this is a chicken quesadilla recipe, just warm up your leftover cooked chicken or chicken from a can. Warm your meat of choice in the microwave while you gather the toppings.

The Toppings

Here’s where it really gets fun. Just like those ‘choose it your way,’ fresh Mexican restaurants like Moe’s, you can literally opt to include anything you want. Choices could be fresh veggies like onions, lettuces, tomatoes, or mushrooms. Cooked or canned beans are also a great addition, as well as cooked rice. Grab whatever veggies, beans, and rice you have on hand.

Putting it together

Preheat oven to 400 degrees and then place a few tortillas on a plate with a damp paper towel over them and warm in the microwave for about 20 seconds.

Pour a little oil in a skillet along with your meat, veggies, and rice of choice. You will stir and cook this on medium high for three minutes.

If you aren’t using salsa as your base, skip this step. -> Pour your salsa into the skillet with the meat, veggies, and/or rice and let cook on medium/high for two minutes.

Grab the warm tortillas out of the microwave and place side by side on a greased cookie sheet (without overlapping). Add ⅓ to ¼ of the mixture in the skillet to each tortilla, not filling all the way to the edges. Add cheese if you desire to do so. Place another tortilla on top of the mixture.

Brush a tiny layer of olive oil over the tortilla on top. Sprinkle top of tortilla with seasoned salt or whatever seasoning you’d like to experiment with. Garlic salt is also good.

Place the cookie sheet into the oven and set the timer for five minutes. After the cook time is over and the top tortilla is not browned, broil it for just a few seconds (don’t walk away – watch it!).

Ingredients
  • A couple Tablespoons of Olive Oil
  • Pack of tortillas
  • 1 jar of Salsa or other “base” sauce
  • 1 pound or more of cooked or canned chicken
  • 3 cups of veggies of your choice
  • Optional cooked beans and/or rice of your choice
  • Optional shredded cheese
  • 4 Tablespoons seasoned salt
Instructions
  1. Preheat oven to 400 degrees.
  2. Place a plate of tortillas covered w/damp paper towel in the microwave for 20 seconds.
  3. Heat olive oil in a medium/high skillet.
  4. Add cooked meat, veggies, and rice of choice.
  5. Stir and cook on medium/high for three minutes.
  6. Pour your salsa (if using) into the skillet with the mixture.
  7. Cook on medium/high for two minutes.
  8. Grab the warm tortillas out of the microwave and place side by side on a greased cookie sheet.
  9. Add ⅓ to ¼ of the mixture from the skillet to each tortilla, not filling all the way to the edges.
  10. If you didn’t use salsa, spread your base on the bottom of tortillas.
  11. Add optional cheese.
  12. Place another tortilla on top of the mixture.
  13. Brush small amount of olive oil over the tortilla on top.
  14. Sprinkle top of tortilla with seasoned salt.
  15. Place the cookie sheet into the oven and set the timer for five minutes.
  16. After the cook time is over and the top tortilla is not browned, broil it for just a few seconds
  17. (don’t walk away – watch it!).
  18. Cut into quesadilla slices with pizza cutter
